Delicious Homemade Egg Noodles
I am a big fan of homemade anything. Food always tastes better if you make it yourself. We are big fans of soup around here and any soup is made better with the addition of delicious homemade egg noodles.
The perfect soup when you are under the weather is chicken noodle, add in these delicious homemade organic egg noodles and you have a filling meal that everyone will love. Let’s look at how easy these noodles are to make and all the things you can do with them.
Delicious Homemade Egg Noodles
This is a very simple recipe. You can make as many or as few noodles as you’d like. It is very flexible and forgiving! I typically make a triple batch for our family of 6. You can easily make more or less depending on your needs.
Homemade Egg Noodles Ingredients
1 cup organic unbleached flour
1 organic egg
1 T organic half-n-half
dash sea salt
I make a triple recipe. Start out with 3 cups of flour in a bowl, or on a counter if you don’t mind the mess. I don’t love extra messes because I clean up enough as it is, so I use a large bowl.
Make a well in the flour and add 3 eggs.
Add 3 tablespoons of half-n-half and about a teaspoon of salt to the well with the eggs.
Mix up the liquids in the well. After you do this, take a wooden spoon, or your hands, and start slowly incorporating the flour from the sides of the well into the liquid.
Pretty soon it’ll turn into a dough. It will get hard to stir and slightly less sticky. Start kneading it by hand now.
Slowly knead in more flour until the dough is smooth and not sticky. There may be flour left in the bowl once the dough reaches the right consistency and that is okay!
Lightly coat with oil and wrap in plastic wrap. Let it rest for 10-15 minutes.
Using plenty of flour on the countertop, roll the dough out fairly thin to about 1/8″ – 1/4″ thick.
After it’s rolled, take a pizza cutter and slice it into strips. Make them the size and shape you prefer.
Add to boiling soup, stirring as you add them, and cook until done approximately 2-4 minutes. You can also dry them for a few hours on the counter until they “snap” when you break them in half. Store in the fridge or freezer.

Can you Freeze Homemade Egg Noodles?
Yes, you can freeze homemade egg noodles. First, you will need to dry the noodles for a few hours on the counter until they “snap” when you break them in half. Store in the fridge for up to 4 days or in the freezer for up to 3 months. You don’t have to defrost the noodles before you cook them; simply drop the frozen noodles into boiling water. When you cook frozen pasta, always use an additional quart of water so the temperature does not drop when the pasta is added. Increase the cooking time of frozen noodles to 5-6 minutes.
