These 2 ingredient pumpkin muffins are cake mix muffins that only require two ingredients and also double as Weight Watchers muffins for just 3 points! They are the easiest muffins ever to make and they taste amazing.

I love the healthy pumpkin muffins recipe I shared with you last year and this 2 ingredient pumpkin muffins recipe is even easier! You just need two ingredients and a few minutes to throw these together and enjoy! If you’ve never made cake mix muffins then give these a try because they couldn’t be any easier to make. 2 Ingredient Pumpkin Muffins

These cake mix muffins use just 2 ingredients! You’ll need:

  • spice cake mix
  • pumpkin puree (not to be confused with pumpkin pie filling)

You’ll also need water but I don’t count that towards ingredients. You won’t find any eggs, butter or oil in this recipe! It’s a lighter version of pumpkin muffins that will satisfy your cravings and keep your diet on track. Plus, they are VERY easy to make!

Cake Mix Muffins

Making muffins with a cake mix is SO easy and only takes about 5 minutes. You’ll have fresh baked muffins in no time and your house will smell amazing!

How to make muffins from a cake mix?

All you need to do is mix together the cake mix, pumpkin puree and water in a bowl.

Once your batter is mixed together, fill each muffin liner 3/4 full of batter. I told you this would be easy. The muffins are already set to be popped into the oven!

How long do you bake muffins?

These 2 ingredient pumpkin muffins take just 20-22 minutes to bake. You’ll see the tops begin to crack and a toothpick inserted in the center will come out clean when they are done. Don’t overbake them or they tend to be dry.

2 Ingredient Pumpkin Muffins

Ingredients
  

  • 1 box of spice cake mix
  • 1 cup water
  • 1 15 oz can of pumpkin puree

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix spice cake mix, water and pumpkin in a medium sized bowl until well combined.
  • Place cupcake liners in a cupcake pan and fill each ¾ with mixture. (You can add a little sprinkle of brown sugar on top of each one if desired)
  • Bake for 20-22 minutes or until an inserted toothpick comes out clean

Notes

ONLY 3 WW points per muffin.

Weight Watchers Muffins

These cake mix muffins also double as Weight Watchers muffins! They are only 3 Weight Watchers points per muffin so you can enjoy without guilt!

 

Can you freeze muffins?

Yes! Muffins freeze really well. Simply follow the recipe and bake the muffins as directed. Allow the muffins to cool completely and then wrap them individually in plastic wrap. Place in a zip-top freezer bag and freeze. To thaw simply remove from the freezer and allow to thaw at room temperature.
