My Mother’s banana bread recipe was handed down to her by her Mother and it is not the usual dense banana bread. It has a completely different texture and is light and fluffy banana bread recipe as opposed to the more traditional dense and heavy variety. It’s almost a cake-like texture but with the amazing banana bread flavor. I love it!

Easy & Delicious Banana Bread Recipe

Next time you have old bananas sitting around don’t just toss them! Turn them into banana bread. This recipe also freezes well so you can make a bunch and freeze them for later. To eat just take a loaf out the night before and leave it on the counter to thaw. It will be ready to eat by morning!

Light & Fluffy Banana Bread Recipe

Light and fluffy texture of the bread unlike traditional banana bread.

Ingredients
  

  • 1/3 C Shortening
  • 3/4 C White Sugar
  • 2 Sliced Bananas
  • 1 Egg
  • 2 C Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 3/4 C Buttermilk or regular milk
  • 1 tsp Vanilla

Instructions
 

  • Cream together the shortening, sugar and bananas.
  • Add egg and beat until well blended.
  • Combine dry ingredients and gently stir them into shortening mixture alternately with liquid ingredients.
  • Prepare your loaf pan (or mini loaf pans) with non-stick spray or shortening and then add your banana bread mixture.
  • Bake at 350 degrees for 1 hour until a toothpick inserted in the center comes out clean.

  14. I’ve made this several times now and it turns out great! I have some in the oven now but I don’t know how it will turn out. Right in the middle of making it, I realized I only had about 1/4 cup of shortening, so I added a little bit of oil with it. Last week I had a bunch of dark bananas that I mashed and packaged up, two each, in sandwich bags in the freezer. However, when I thawed one out, it was kind of runny, so I had to add less milk to recipe to compensate for the extra liquid in the bananas. Sure hope it turns out – the batter tasted good though. This recipe is a huge hit here in our full house – it’s usually gone by the next day. Yummm….

  15. Thanks for this recipe. I have tried different banana bread recipes and I hated how heavy it was every time. This one is a keeper!
    I used sunflower oil instead of the shortening and might try with coconut oil next time to see. They were light, fluffy and delicious. My husband was flipping out on how good they turn out.

    I used my convection oven and cut the baking time way down. It also gave the tip a slightly crispy texture.. so delicious!
    Making another liaf tonight. The family loves it ❤️

  18. I have to admit, I was a bit skeptical about making this recipe but it really is lighter and fluffier than my previous go-to recipe that contains butter. Flavor is delicious and the texture is firm but not crumbly and it’s a lot less dense and heavy! I made four mini-loaves and at 35 minutes, they came out perfectly done. Thanks for sharing! ❤️

This is a great recipe, changed few things like using butter instead of shortening, added an extra 1/2 tsp of Baking powder, used the hand blender to get a very fine consistency instead of mashing the bananas cause I don’t like “seeing” the bananas in the my bread lol, and added chopped walnuts. The results are heavenly! Thank you

  20. This has to be the best banana. Bread recipe I have ever tried.. I added some walnuts and substituted coconut oil in place of shortening and it was still nice and light. Thank you so very much for the wonderful recipe.

  21. This is a great recipe. I made the following mods and thought I’d share:

    * Used mini-loaf pans and adjusted the bake time to 45 minutes, which was probably about 10 minutes too long.
    * Added about 1/4 cup of soy protein powder to give the bread a little more protein.
    * I find my bananas often have too much moisture and the baking time and texture is impacted. This time I was using bananas I had previously frozen. When I defrosted them, a lot of sugary, watery banana liquid came out. Rather than wasting that or risk it impacting the texture, I simmered it down to a syrup and added it to the milk.
    * I didn’t have shortening so I used salted butter (room temp).

    Other than being a tad overcooked, the mini-loafs came out with a nice crunchy crust and a fluffy soft inside. Yum!

    I wanted to add chocolate chips but forgot. I’ll have to try next time.

  23. I’ve been using this recipe consistently for the last 4-5 years and I LOVE it! A few tweaks have made it even better (I think!)
    1. I make sure to cream the butter and sugar until properly light and fluffy before adding in the bananas. This helps with a fluffier end product.
    2. I rarely have shortening or buttermilk on hand so I substitute the shortening for softened butter and the buttermilk for a mix of Greek yogurt and whole milk.
    3. I’ve tried lots of different add-ins but my favourite is good ol’ choc chips or sprinkling the top with a mixture of cinnamon, chia seeds and oats to add a bit of protein and crunch.

  24. This recipe is the bomb! Eating my second hunk and I do mean hunk right now. So light and fluffy, exactly what I wanted. Banana bread for lunch? Why not! Thanks for sharing. (I’m trying to cut back sugar,,, so hard, so I cut sugar by half. I mixed brown sugar and salt, not much, just enough to lightly sprinkle on top. Then I topped that with chopped pecans but not much. Fools taste buds into thinking it’s sweeter). Going back for more.
