Zucchini Chocolate Chip Cookies Recipe
It’s that time of year when the zucchini’s are coming out of my garden faster than I know what to do with them! There is always the trusty grilling slices or sauteeing them with other veggies, but I like to get creative and make all sorts of things with my zucchini. My absolute favorite recipe is this Zucchini Dessert Crisp recipe. It’s amazing and I think it tastes even better than apple crisp. It’s divine. These Zucchini Pizza Wheels are pretty darn good too. My next endeavor was to add zucchini into one of our favorite treats, chocolate chip cookies!

Shredded Zucchini
First you need to peel and grate your zucchini so it’s nice and shredded like this.

Next you are going to mix your dough and then fold the zucchini into it.

Then add your chocolate chips and mix.

Drop in balls on a greased cookie sheet. Yum!

Ingredients
  

  • 1 Cup Butter - Softened
  • 2 Cups Sugar
  • 2 Eggs - Beaten
  • 4 Cups Flour
  • 2 Tsp Baking Soda
  • 2 Tsp Cinnamon
  • 1 Tsp Salt
  • 2 Cups Grated Zucchini
  • 2 Cups Chocolate Chips

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray cookie sheets with non stick spray.
  • Cream butter and sugar until fluffy.
  • Add egg, flour, baking soda, cinnamon and salt.
  • Mix well
  • Stir in zucchini.
  • Fold in chocolate chips
  • Drop by spoonful onto cookie sheet
  • Bake 15-20 minutes
  • Don't overbake!
  • Enjoy!

    I love zucchini!! I make zucchini bread, a veggie pie that taste like pizza, zucchini fritters, etc. but I have never made zucchini cookies. I pinned your recipe because I have lots of zucchini and would love to try them. Thank you so much.
