Pork Tacos with Fresh Pineapple Salsa
These pork tacos are the BEST thanks in part to the fresh pineapple salsa and healthy sriracha sauce on top. The flavors really pop and the fresh combination is amazing! The best part? You can make these pork tenderloin tacos on the stove top or in the Instant Pot! This clean eating recipe is healthy AND packed with flavor.
Pork Tacos
We have a weekly Taco Tuesday here in our home and it’s one of these easy dinner ideas that I love. Regular tacos are always a hit but week after week they can get boring and it’s so much fun to mix it up on taco night and throw in something new. These pork tenderloin tacos were just the flavor I was craving. Fresh and bright flavors that really make an amazing flavor profile in your mouth. Make these on the stove top or in the Instant Pot for a more hands-off approach! Pork Tacos Recipe
This pork tacos recipe is really easy and the flavors are so vibrant and fresh. Begin by preparing the pineapple salsa and sriracha sauce which you can prepare up to a day ahead of time. That means when those busy weeknights hit, you’ll be prepared to whip together a quick meal that tastes amazes and is worthy of impressing company.
Pineapple Salsa Recipe
For the pineapple salsa that will top the pork tacos, you’ll need the following ingredients:
- 1 cup chopped pineapple (fresh, not canned! – Use this for the fastest way to peel and cut it)
- 1 cup chopped cucumber (I use this as the fastest way to dice)
- 1/2 cup chopped cilantro
- 1/2 cup chopped red onion (I use this as the fastest way to dice)
- 1/2 lime to squeeze out the juice
- a dash of salt
Simply toss together all of the ingredients in a bowl and squeeze the lime juice over the top. I use this handy tool to get all the lime juice out of my limes! Mix together and store in the fridge until ready to eat. Side note – table salt is not healthy at all. If you are following a clean eating diet I highly recommend replacing your table salt with pink Himalayan salt instead. This type of salt doesn’t have the same negative health effects as regular table salt does and even carries some benefits.
Sriracha Sauce Recipe
For the sriracha sauce, simply combine 1 cup plain greek yogurt and 1/4 cup sriracha sauce (adjust to your taste) in a small bowl and mix. Store in the fridge until ready to serve. *For dairy free diets use almond milk yogurt instead of greek yogurt.
Pork Tacos Recipe – Stove Top Version
Follow these directions to make the pork tacos on the stove top. For Instant Pot pork tacos directions, scroll down. Heat 1 tablespoon olive oil in a large saute pan over medium heat. Saute onion, garlic, and jalapeno until fragrant (1-2 minutes). Increase heat to high and add pork tenderloin slices. Brown all sides and cook until no longer pink. Serve over warmed tortillas and top with pineapple salsa and sriracha sauce.
Pork Tacos Recipe – Instant Pot Version
To make Instant Pot pork tacos, turn your Instant Pot on to “Saute”. Add 1 tablespoon of olive oil or avocado oil and allow to heat up. Add onion, garlic and jalapeno and saute for one minute. Add 1 cup of chicken broth and sliced pork tenderloin. Close lid and set to “Manual” pressure 10 minutes. Allow pressure to naturally release and then serve pork over warmed tortillas and top with pineapple salsa and sriracha sauce.
These pork tacos are SO delicious and so easy. If you have any leftovers simply store the pork, pineapple salsa and sriracha sauce in separate containers and reheat the pork on the stove for a minute and serve.

Pork Tacos with Fresh Pineapple Salsa and Sriracha Sauce
Ingredients
For Pork Tacos
- 1 tablespoon olive oil or avocado oil
- 1/2 red onion diced
- 1 clove garlic diced
- 1 jalapeno diced and seeds removed
- 24 oz pork tenderloin sliced in strips
- 1 cup chicken broth only if making in the Instant Pot
- tortillas
For The Pineapple Salsa
- 1 cup fresh pineapple chopped
- 1 cup cucumber chopped
- 1/2 cup cilantro chopped
- 1/2 cup red onion chopped
- 1/2 lime to squeeze out the juice
- dash salt
For the Sriracha Sauce
- 1 cup plain greek yogurt
- 1/4 cup sriracha sauce adjust to taste
