Hot Cocoa Cookies Recipe

These hot cocoa cookies are chewy on the inside, crunchy on the outside and packed full of delicious hot chocolate and mini marshmallows! They are the perfect winter cookie to pair with your Swiss Miss hot cocoa and enjoy a moment by yourself!
Hot Cocoa Cookies
I am a sucker for a good cookie recipe, as evidenced by my melting snowman cookies, melting moments cookies and reindeer cookies in a jar. I also happen to LOVE hot cocoa. Here in Minnesota, the weather has turned cold and snowflakes are flying. It was time for me to fuse two of my favorites, hot cocoa, and cookies, into one out of this world hot cocoa cookies recipe. I’ll warn you, it’s impossible to eat just one of these scrumptious confections!
I always have Swiss Miss milk chocolate hot cocoa mix on hand, and rarely have baking cocoa on hand so if you’re anything like me, you’ll have all the ingredients for this recipe in your pantry already! If not, head to Walmart and grab a 30 count package of Swiss Miss milk chocolate hot cocoa. You need 6 envelopes and naturally, you want the 30 count package so you can serve hot cocoa with your cookies!
Begin by making yourself a cup of Swiss Miss Hot Cocoa with Marshmallows because you know you want to sip some delicious cocoa and listen to Christmas music while you bake these!
Now that you’ve enjoyed a moment with your hot cocoa, we can start baking! I love to bake! Even better if I can listen to Christmas music. Begin by creaming together butter and sugars in a mixer. Beat in eggs and vanilla and then add 6 envelopes of Swiss Miss Milk Chocolate hot cocoa mix.
Then add flour, salt, and baking soda and mix well. The dough will become very thick. Add 1 cup of mini semi-sweet chocolate chips and mix together. Chill the dough for about an hour in the fridge. This will prevent the cookies from spreading on the pan. It was 9 degrees outside today so I stuck some plastic wrap over mine and set it outside for 15 minutes or so and it was nice and chilled in no time!
Next, line baking sheets with parchment paper. Scoop small cookie dough balls onto the parchment paper, leaving a couple inches between each ball of dough.
Bake for 10 minutes and then remove from oven. Immediately press mini marshmallows (the cocoa kind, not the miniature marshmallows you would bake with) into the tops of the cookies before they cool.
Allow to cool and then remove from the pan. I like eating these warm, but they taste great after they’ve cooled too! The outside has a nice crunch and the inside is chewy and scrumptious! The hot cocoa flavor really shines through and the mini marshmallows bring me straight back to my childhood, warming up after a fun day skating or sledding outside. Of course, these are best enjoyed alongside a cup of Swiss Miss hot cocoa! YUM!

Hot Cocoa Cookies Recipe
Easy and delicious hot cocoa cookies made with Swiss Miss hot cocoa mix. Bursting with hot cocoa flavor and mini marshmallows!
Ingredients
- 1 cup 2 sticks unsalted butter, room temperature
- 1 cup white sugar
- 2/3 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 6 envelopes Swiss Miss Milk Chocolate Hot Cocoa Mix
- 3 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1 1/4 teaspoon baking soda
- 1 cup mini semi-sweet chocolate chips
- 2/3 cup mini marshmallows the hot cocoa kind, not the kind you would bake with
Instructions
- Cream together butter, white sugar and brown sugar in a stand mixer. Beat in eggs and vanilla until well mixed.
- Add Swiss Miss hot cocoa envelopes, flour, salt, and baking soda and mix until well combined.
- Add in mini chocolate chips and stir until well mixed.
- Chill the dough in the fridge for an hour. This helps prevent the cookies from spreading on the pan.
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper. Scoop 1" balls onto the pan, leaving about 2 inches between dough balls. Bake for 10 minutes, until edges are cooked and tops begin cracking.
- Immediately press mini marshmallows into the tops of the cookies when you remove them from the oven. Allow to cool completely. Store in a loosely covered container.
