Easy Tropical Ice Cream Sandwich Recipe

Summer is winding down and I’m looking for every excuse in the book to make it last a little bit longer! I don’t want it to end! This Tropical Ice Cream Sandwich is the perfect way to get all those Summer favorites into one delectable dessert! It combines grilling with ice cream and what could be better than that?!
We gathered around on our deck and grilled supper followed by grilling pineapple slices for our dessert. I love sitting out on our deck as a family and enjoying dinner. Adding in this special treat just made it that much more enjoyable. Start out by grilling 2 pineapple slices over low to medium heat for 90 seconds on each side. Allow to cool briefly so they don’t melt your ice cream! Ours were still a little too hot and our ice cream melted very quickly.
Next you will sandwich softened Breyers® Natural Vanilla Ice Cream between the 2 grilled slices of pineapple. Breyers Natural Vanilla is America’s number 1 vanilla ice cream for good reason! Parents now have additonal reasons to feel good about serving it to their families. We love Breyers because not only does it taste amazing, but they also source milk and cream from cows not treated with artificial growth hormones*. Breyers Natural Vanilla Ice Cream is made with fresh cream, sugar and milk. All Breyers vanilla is real and comes from sustainably farmed, Rainforest Alliance Certified vanilla beans.
Next coat the outside of the ice cream sandwich in 2 Tbsp of toasted coconut. Then enjoy it because it’s amazing!
Breyers Natural Vanilla ice cream is available at grocers nationwide for a suggested retail price of $3.99-$5.99. Follow Breyers on Pinterest, Breyers on Facebook and Breyers on Twitter for more great recipe ideas!

I have a big sweet tooth, but hate the extra calories of an ice cream sandwich. This is a great solution to that problem.
You can’t go wrong with fresh fruit and ice cream.

My kids are going to love this. They love fresh pineapple. I have never had it with ice cream before.
Then they are in for a treat when you break out the ice cream to go with their pineapple.
That sounds like such a delicious summery treat! Pineapple and vanilla ice cream are a great combo.

This ice cream sandwich looks really good. Would definitely make me wish I was in Hawaii while eating it! 🙂
That would be the only thing to make it better. Having one in Hawaii.
Love Breyer’s ice cream, it’s my go to brand. Also, I love ice cream.
We love Breyer’s ice cream also.
Ok, yummmmmm… These look so good, makes me want it for breakfast! Hehe. I think it would be so good with some chocolate drizzled on top too – I love the chocolate and coconut combo. Thanks for sharing over at the #HomeMattersParty – hope to see you again next week.
I will have to try your delicious recipe. I like that Breyers ice cream does not have Growth hormones. We do not need this in our ice cream. The dessert idea looks refreshing.
It was a great dessert. And I agree about the ice cream.
I am a big fan of anything coconut and pineapple. Especially love the two together. Never thought of this but what a wonderful idea. This would be almost like drinking a pina colada and that sounds delicious.
It is like eating a kid friendly pina colada. It is a great combo of flavors.
that looks so good,my grandkids would gobble this up fast
I eat ice cream year round. I just love it…not a glutton, but I eat my fair share even in the winter. I just love this idea. So refreshing in flavor and a great use for canned pineapple tto!
We are the same way. There is always ice cream in the freezer.
I don’t keep ice cream around, mainly buy it when the family cries out for it. this combination looks great, may make it next summer.
I like the concept, but I may choose something other than pineapple. I would like to do that with brownies.
Oh, that would be really good too.
