Celebrating Danika Going To Preschool With #CoolWhipFrosting! Mandarin Orange Cake with Pineapple Cool Whip Frosting Recipe!
Danika started preschool this year and I can’t believe she is already 4 years old and riding the bust to school 2 full days a week! Where does time go? It seems just yesterday I was bringing her home from the hospital! To celebrate her starting preschool we decided to have our own little party with mandarin orange cake with pineapple Cool Whip frosting! It’s an everyday occasion worth celebrating! I headed to Walmart with the kids to see if I could find the new Cool Whip frosting! We found it right next to the Cool Whip in the frozen dessert section.
They had chocolate and vanilla flavors. We chose the vanilla for our mandarin orange cake.
The kids had fun getting buried in the shopping cart! You can see our entire shopping trip including Aiden’s haircut at Cost Cutters in my Google+ album!
Then we went home to make our cake! I made it that night so we could have it for breakfast the next day.
I set the Cool Whip Frosting on the counter for an hour before I used it.
Once my cake cooled I mixed crushed pineapple with the Cool Whip Frosting and frosted my cake.
It turned out amazing! It was soooo good!
The kids were VERY excited to get to eat cake for breakfast! That never happens around here so it was a real treat! Danika attending preschool is an occasion worth celebrating and worthy of a special treat!
Aiden thought he was pretty lucky to get cake too!
I’m not sure what got fed more cake, Carson or his highchair? He enjoyed smearing it everywhere!
Mandarin Orange Cake with Pineapple Cool Whip Frosting
Ingredients
- 1 yellow cake mix
- 4 eggs
- 1/2 cup oil
- small can mandarin oranges
- Topping:
- Vanilla Cool Whip frosting
- 12-20 oz can Crushed Pineapple
Instructions
- Mix together cake mix, eggs, oil and mandarin oranges.
- Beat for 30 seconds.
- Pour in a greased 9x13 pan.
- Bake at 350 degrees for 30 min (or less until a toothpick comes out clean)
- Topping:
- Mix pineapple and frosting together.
- Don't overstir.
- Frost cooled cake and store in fridge covered.

I actually just saw a comercial for this the other day (The Cool Whip Frosting) I had never seen it before, but thought…. now that is a great Idea and its about time!
I have a similar recipe for this. I add shredded coconut to the frosting though. Yum! A friend is allergic to the oranges and he pops some Benadryl and eats a slice when I make it. Just that good I guess lol! Congrats to Miss Danika!
