How To Make Campfire Cupcakes
These campfire donuts are made using my favorite chocolate cupcake recipe and topped with the best marshmallow buttercream frosting. Made completely from scratch, these cupcakes are SO good! Bring them to your next campfire or camping trip and I guarantee they will impress! Let’s start by making the chocolate cupcakes!
Best Ever Chocolate Cupcakes
These are the best, uber moist chocolate cupcakes I’ve ever had! They are made from scratch using cocoa powder for a rich, deep chocolate flavor baked in a fluffy cupcake. They kick any box mix to the curb and you won’t look back once you see how easy these are to make and how tasty the results are!
Chocolate Cupcake Ingredients
For this recipe we use the following ingredients:
- All purpose flour – we haven’t used any alternative flours in this recipe – if you try them leave us a comment!
- granulated sugar – we recommend pure cane sugar
- unsweetened cocoa powder – this is meant for baking
- baking powder – make sure you use aluminum-free baking powder
- baking soda
- salt – we only recommend real salt such as sea salt or pink Himalayan salt (table salt is terrible for you!)
- large egg – at room temperature (or warm it up in a cup of warm water)
- buttermilk – at room temperature – if you don’t have any buttermilk then you can substitute with 1/2 tbsp lemon juice or vinegar added to a 1/2 cup measuring cup and filled the rest of the way with milk. Let it sit for 5 minutes before adding to the recipe in place of buttermilk.
- olive oil – or avocado oil (we never use vegetable oil as it’s not a healthy oil)
- vanilla – only real vanilla, never imitation
- very hot water
These cupcakes only require 10 minutes of prep time so they don’t take much longer than a box mix and the end result is SO worth it!
How To Make The Best Chocolate Cupcakes
We will be combining the dry ingredients together first in a bowl. Then we will add the wet ingredients and use a stand mixer to combine them all. Finally, we add the hot water to the batter and mix again, scraping the sides of the bowl as needed. Your batter will be thin, don’t be worried!
Fill cupcake liners only half full and bake for 18-21 minutes, until the tops bounce back when you touch them with a finger or if a toothpick comes out clean.
Allow them to cool completely before you move on to frosting them.
BEST Marshmallow Buttercream Frosting
Our campfire cupcakes are topped with the BEST ever marshmallow buttercream frosting made from scratch! This recipe is sweet and creamy and tastes like marshmallow! When combined with the chocolate cupcake, it’s a flavor smash. It’s awesome!
Marshmallow Buttercream Frosting Ingredients
For this made from scratch marshmallow frosting recipe we use the following basic ingredients:
- powdered sugar – we use pure cane powdered sugar
- butter – we use salted sweet cream butter (organic)
- vanilla – real, never imitation
- piping bags – we like Wilton piping bags
- decorating tip – use a thick piping tip
- red and yellow gel food coloring
How To Make Marshmallow Buttercream Frosting
I use a stand mixer to make my frosting. Mix together butter, marshmallow creme and vanilla in a stand mixer. When it is completely mixed together add the powdered sugar to the bowl and continue mixing until it is smooth. This is the yummiest frosting!!
After making the marshmallow frosting you will need to divide the frosting into two bowls. Color one of the bowls with red gel food coloring and the other bowl with yellow gel food coloring.
Place the icing into a piping bag with a star tip, adding small dollops at a time alternating between red and yellow colors to create the fire effect in the frosting.
Now pipe swirls onto each cupcake to create the bonfire look. Then break pretzel sticks in half and create a bonfire look with them over the frosting.
Finally, use toothpicks to spear mini marshmallows that you can “toast” over the bonfire!

Ingredients
For Chocolate Cupcakes
- 1 cup all purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 large egg at room temperature
- 1/2 cup buttermilk at room temperature
- 1/2 cup olive oil or avocado oil
- 1 teaspoon vanilla
- 1/2 cup very hot water
For Marshmallow Buttercream Frosting
- 3 cups powdered sugar
- 1 cup salted butter
- 1 7oz container marshmallow cream
- 2 teaspoons vanilla
- 2 decorating bags with star tips
- red and yellow gel food coloring
For Decorating
- pretzel sticks
- toothpicks
- mini marshmallows
- cupcake liners
Instructions
For the chocolate cupcakes
- Preheat oven to 350 degrees F. Line a cupcake pan with cupcake liners.
- Combine flour, sugar, cocoa powder, baking soda and salt in a mixing bowl and mix together.
- Combine the egg, buttermilk, oil and vanilla in another bowl and whisk together. Add the wet ingredients (except the hot water) to the dry ingredients and mix together using a stand mixer until combined.
- Add the hot water to the batter and mix again until combined. Batter will be thin.
- Fill cupcake liners only 1/2 full and bake for 18-21 minutes or until the tops bounce back when you touch them or a toothpick inserted comes out clean. Cool completely before frosting.
For Marshmallow Buttercream Frosting
- Mix together butter, marshmallow cream and vanilla.
- When completely mixed add the powdered sugar to the bowl. Mix until the marshmallow buttercream frosting is smooth.
For Decorating
- Divide the frosting into two bowls. Color one of the bowls with red gel food coloring and the other bowl with yellow gel food coloring.
- Place the icing into a piping bag with a star tip, adding small dollops at a time alternating between red and yellow colors to create the fire effect in the frosting.
- Spear mini marshmallows with toothpicks and decorate tops of cupcakes with pretzels broken in half to look like a campfire.
