Two Step Spicy Curry Beef With Basmati Rice Recipe -Musthavemom.com

Fall means it is time to pull out my slow cooker and take advantage of easy meal prep for busy weeknights. It’s a great time to add some new recipes to your recipe box and take your family on a trip around the world so to speak. When Success® asked me if I’d like to share a favorite recipe using their Success® Basmati Rice I was more than happy to spice up dinner time with some new regional dishes. This Spicy Curry Beef recipe was so easy and my family really enjoyed it. It wasn’t too spicy for my kids to eat either.

To make the Spicy Curry Beef all you need to do is dump coconut milk, water, curry paste, lime, cumin, red pepper flakes, onion, bell peppers, garlic, ginger, salt, and pepper into your slow cooker, add the beef and cook for 8 hours on low. Start it in the morning and it’s ready by dinnertime. Then shred the beef and add back into the slow cooker and it’s ready to serve! I served it over Success® Basmati Rice which proved to have excellent flavor!

Success® Basmati Rice is ready in ten minutes and is boiled in the BPA free bag so prep is quick and easy. My family LOVES this new Basmati Rice. The flavor is rich and elegant. My kids said it tasted like popcorn which I thought was funny. They gobbled it up so I don’t care what they want to compare it to! The rich, nutty flavor was a great deviation from the normal brown rice we usually eat. Success® Basmati Rice is the only boil-in-bag Basmati rice available. It’s long and slender and elongates 3-4 times in length when cooked.

Making it was easy and required placing the pre-portioned bags in the water and bringing it to a boil.

Once they were done I cut open the pouches and poured them into a bowl. The rice was fluffy and I loved how each grain stayed separated from one another.

Ingredients
  

  • 4 # Beef Chuck Roast obvious fat removed
  • 1/2 Cup Coconut Milk
  • 1/2 Cup Water
  • 1/2 Tbsp Red Curry Paste
  • Juice of 1 Lime
  • 2 tsp Cumin
  • 1/2 tsp Red Pepper Flakes
  • 1 medium yellow onion diced
  • 1 Yellow bell pepper cut in strips
  • 1 Red bell pepper cut in strips
  • 1 Orange bell pepper cut in strips
  • 4 cloves garlic minced
  • 1/2 Tbsp ground ginger
  • 1 Box Success Basmati Rice
  • Salt and Pepper to taste

Instructions
 

  • In the slow cooker combine coconut milk, water, curry paste, lime juice, cumin, red pepper flakes, onion, peppers, garlic, & ginger and mix well. Then add beef and cover.
  • Cook on low 6-8 hours until beef is tender and falling apart.
  • Remove beef and shred then add back into the slow cooker.
  • Make rice according to box instructions.
  • Serve beef over rice.

  1. I love that the more flavorful rice is available in the boil in the bag I actually saw all the varieties at the grocery store last night. I used to use them all the time and the one downside was how bland the rice was. Now I know that if I am somewhere without my rice cooker I can run to the store and pick these up to make as part of a great meal. I had no idea they were BPA free huge bonus!

  2. I love boil in a bag rice- it is so much easier than dealing with pots and sticky starch rings. I also love Basmati for it’s texture it lends well to Thai!
