Healthy Slow Cooker Paleo Buffalo Chicken Chili Recipe
We have been experiencing some -30 degree temperatures here in Minnesota. That means I’m craving something hearty that will warm my belly and give me the illusion of eating comfort food, while sticking to a healthy diet. This healthy slow cooker paleo buffalo chicken chili recipe does just that and as an added bonus, it’s the easiest thing you’ll make all week!
A friend of mine recently recommended a paleo buffalo chicken chili that she said was life changing. I decided to give the healthy comfort food a try and after a little bit of tweaking I have put together an incredibly easy slow cooker version of my friend’s “life changing” paleo buffalo chicken chili recipe.
The paleo diet is a diet consisting of foods that cavemen could eat essentially. That means anything you could hunt, grow, etc. The paleo community is split on dairy. Some paleo enthusiasts are very against it and others accept some dairy. No matter your stance you can make this recipe without topping it with greek yogurt as I did. While I am not on the paleo diet, I do enjoy paleo recipes as they are made with clean ingredients and lack any processed foods. So whether you are on the paleo diet or are just trying to eat healthier, this paleo buffalo chicken chili recipe is for you!
This recipe consists of simply dumping the ingredients in a slow cooker and turning it to low. Now walk away for 8 hours and come back to a healthy, homemade dinner. Easy enough? Want to make it even easier? My go-to time saving helper in the kitchen is this handy little chopper. I seriously use it for everything from making fruit salsa to dicing all my veggies. It makes it go quick and helps me avoid the tears when dicing onions. Use it to dice the sweet potato, carrots, onions and celery quickly and easily!

Healthy Slow Cooker Paleo Buffalo Chicken Chili Recipe
Ingredients
- 1 pound ground chicken raw, do not pre-cook
- 1 white sweet potato peeled and diced
- 2 carrots peeled and diced
- 2 stalks of celery diced
- 1 yellow onion diced
- 2 garlic cloves minced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 15 oz can tomato sauce
- 1 15 oz can diced tomatoes do not drain
- ½ cup hot sauce I used Frank's Red Hot Sauce
- 1 15 oz can chicken broth
Instructions
- Combine all ingredients in a slow cooker and stir. Cover and cook on low for 6-8 hours.
- Serve hot and optionally you may garnish with plain greek yogurt, a squeeze of lime juice, avocado, and/or green onions.

I’ve never seen white sweet potatoes in our markets but I will be on the lookout. This chili looks amazing and that fact that it’s a slow cooker recipe is an added bonus.
