Chicken Fajita Noodle Skillet Recipe

Chicken Fajita Noodle Skillet
I love taking our family favorite recipes and turning them into new dishes. I married an Italian so our love of noodles is real. We also kill for Mexcian food so the fusion of chicken fajitas and noodles just seemed natural. The end result? A juicy, flavor-packed dish that leaves you wanting seconds and thirds. You just can’t go wrong here. I’ll show you how easy this chicken fajita noodle skillet is to make!
For this recipe, I use No Yolks broad noodles. If you aren’t familiar with them you can find them in the grocery store by the other noodles and pasta. No Yolks is a healthy egg noodle alternative, made from egg whites and no cholesterol, and are low in fat and sodium. I love using them in my one skillet noodle recipes because they always cook up smooth, firm and fluffy and stay that way.
Begin by cutting one pound of boneless, skinless chicken breasts into bite-size pieces. Make homemade taco seasoning (recipe below) or use an envelope of taco seasoning to season the chicken. Use only HALF the seasoning at this time.
Head one tablespoon of olive oil in a large skillet over high heat and when the oil is very hot, add the chicken in a single layer. Do not stir until that side has browned (about 1-2 minutes). Then flip the chicken and brown the opposite side. Now, remove the chicken to a plate and set aside for later.
Add the remaining tablespoon of olive oil to the hot skillet (heat should still be on high) and allow oil to heat up. Add onions, bell peppers, and remaining taco seasoning to the skillet. Stir occasionally until the veggies are seared. Turn heat down to low and add minced garlic to the veggies and stir. Remove veggies to the plate with the chicken and set aside.
In your same skillet, add chicken broth, cream, diced tomatoes, uncooked No Yolks broad noodles, and salt. Stir to combine and bring to a boil. Then, cover and reduce heat to medium-low and cook for 15 minutes or until noodles are tender and liquid is absorbed.
Then, add the chicken and veggies back into the skillet and stir to combine.
Serve immediately, preferably with warm breadsticks! YUM!
Homemade Taco Seasoning Recipe:
If you want to make your own taco seasoning for this recipe then simply follow this recipe! It is delicious, inexpensive and doesn’t contain preservatives or fillers like some store brands do!
Ingredients:
1/4 cup ground cumin
1/4 cup kosher salt
2 tablespoons garlic salt
2 tablespoons black pepper
2 tablespoons smoked paprika
Directions:
Combine all ingredients and mix together. Store in an airtight container and use 3 tablespoons per 1 pound of meat.
