Spring is here and that means Summer is right around the corner too! It’s time to bust out of my cappuccino drinking habits and step into the sunshine! One of my favorite things about Summer is that fruit is in season and it’s lemonade drinking season! Berry lemonade is my absolute favorite drink for Summer! In fact I order it whenever we eat out in the Winter too because I love it so much. This Fruit Salsa with Homemade Cinnamon Chips is the perfect Spring or Summer treat and pairs perfectly with an ice cold glass of lemonade! Looking for more recipes perfect for Spring? You can vary this recipe up a bit depending on what fruit is in season or on sale. I used 1# of strawberries, 2 tangerines, 3 kiwis, half of a fresh pineapple and the juice of 1/2 a lime. It was amazing and my family devoured it. This is enough for about 10 people but you can double it if you are bringing it to a gathering. You will need to dice up all the fruit into small pieces. This is the most time consuming part. For firmer fruits you can use a food chopper. I diced the kiwi with a knife so it wouldn’t become mush. The rest I chopped with my food chopper.
The homemade cinnamon chips are perfect for dipping in your fruit salsa and they are equally amazing when eaten alone! This recipe calls for ten 8″ tortillas which will yield 40 cinnamon chips. I ended up doubling that so we would have extras to munch on after the salsa was gone! They will keep in a brown paper bag for about a week.
First brush both sides of your tortilla with melted butter using a pastry brush.
Then sprinkle the top with cinnamon sugar (I only sprinkled one side with cinnamon sugar).
Then use a pizza cutter or kitchen shears to cut the tortillas into quarters. Each tortilla will yield 4 chips. Then place tortillas on a lined baking sheet and cook at 350 degrees F for 15-20 minutes until crisp.
I saved the bottom of my pineapple to use as the bowl for my fruit salsa. Then serve it with your homemade cinnamon chips and a glass of lemonade! My new favorite lemonade is the Country Time Lemonade Starter Berry Lemonade. You can make a single glass or a pitcher (one bottle of the mix makes 3 pitchers)! It’s so delicious!
Garnish your lemonade glasses with some of the fruit you used for your salsa. I set aside some strawberries, pineapple and kiwi to garnish my glasses. I also added a mint leaf to one glass which was great!
I found the Country Time Lemonade Starters at Walmart in the juice aisle. You’ll find them just down from the boxed juice where they have the juice mix in items. There are three yummy flavors including Classic Lemonade, Berry Lemonade and Half Lemonade & Half Iced Tea. I love that I can choose if I want a whole pitcher or just a glass. My husband’s favorite is the Half Lemonade & Half Iced Tea and mine is the Berry Lemonade so I can easily mix up a glass of each of our favorites! You simply add the Lemonade Starter to water and mix. Nothing else required! It’s super quick and easy.

Ingredients
Fruit Salsa
- 1 # Strawberries hulled
- 2 Tangerines peeled and pith removed
- 3 Kiwi peeled
- 1/2 Fresh pineapple peeled and cored
- Juice of 1/2 a lime
Cinnamon Chips:
- 10 8 " Flour tortillas
- 1 stick melted butter
- 1 Cup sugar
- 1 Tbsp cinnamon
Instructions
- Dice all fruit into small pieces and mix together in a bowl.
- Squeeze lime juice from 1/2 a lime into the bowl and mix together.
- Set aside in the fridge to chill.
- Now mix together your sugar and cinnamon in a bowl to create a cinnamon sugar mix.
- Next brush both sides of each tortilla with melted butter. Be generous as the butter helps them to brown and get crisp.
- Sprinkle the top of each tortilla with your cinnamon sugar mix.
- Then using a pizza cutter or kitchen shears, cut your tortillas into quarters to create 4 chips from each tortilla.
- Place cut up tortillas on a lined baking sheet (I use a Silpat mat or parchment paper) and bake at 350 degrees for 15-20 minutes or until crisp.
- Allow to cool and then serve with fruit salsa.
