Minnie Mouse or Mickey Mouse DIY Cupcakes! Easy!
Danika had a Minnie Mouse themed Birthday party this year and I wanted to make some cute, but easy cupcakes. Of course they had to fit the theme so my little sister and I got into my “test kitchen” and came up with a quick, easy way to make adorable Minnie (or Mickey) cupcakes.
Bake your cupcakes as directed and allow to completely cool. Chocolate works best as it looks more like Minnie Mouse. Make sure when you bake them that you are liberal with the batter as you will want them to puff up over the top of the cupcake liner.
After they’ve cooled slice the tops off the cupcakes so that you have a nice cupcake top. Don’t wreck them when you slice them!
Next I used a mini Mickey Mouse cookie cutter to cut Minnie heads out of the tops of the cupcakes.
Then I whipped up some Cool Whip frosting (so good!) and frosted them and topped them with the Minnie heads. Aren’t they cute? And super easy too! If you are doing Mickey you could do red or blue frosting.
Here is the Cool Whip Frosting Recipe:
Ingredients:
1 Cup cold milk
1/4 Cup Powdered Sugar
1 Small box instant vanilla pudding
1 8 oz tub Cool Whip
Mix together milk, powdered sugar and pudding mix on low for 1 minute. Add McCormick Food coloring until desired color. Fold in thawed Cool Whip. *You must add food coloring before adding the Cool Whip because if you stir the Cool Whip too much then it gets watery.

I went through McCormick’s recipes and was able to easily add them to my own personal Look Book. It’s similar to the “visual” idea behind Pinterest. I love being able to see a photo rather than just read a recipe so it’s right up my alley. I found lots of great recipes to try and it’s nice being able to photo “bookmark” them in my Look Book. Then they are always there whenever I login to my account. I don’t have to worry about bookmarking each page on my computer or trying to remember which recipes I wanted to try. It’s great!
