Strawberry Crinkle Cake Mix Cookies Recipe
If you are anything like me, having the kids home for the summer means trying to come up with fun things to do. One of our favorite activities is cooking together. The kids love helping in the kitchen and I love easy recipes that they can help make. These easy strawberry crinkle cake mix cookies are the perfect sweet treat for summer days and they are easy enough to make the kids can help!
These cake mix cookies are a regular part of our summer fun. They are perfect for those rainy days and so easy to make. The kids look forward to helping in the kitchen and making these cookies a few times every summer. For these cake mix cookies recipe you will need the following:
- 1 box of Strawberry Cake Mix
- 2 Eggs
- ⅓ cup of Canola or Vegetable Oil
- ½ cup of Confectioner’s Sugar (powdered sugar)
To start, preheat oven 350 degrees and line a cookie sheet with parchment paper or silicon liner.
In large mixing bowl add the cake mix, oil and eggs and mix it well until a sticky dough is formed. Let it refrigerate for about 30 minutes.
Add the powdered sugar in a bowl or plate.
Using a small cookie scoop, scoop out about 2 tablespoons of the dough and roll it between your palms to form a smooth round ball.
Roll it completely in the powdered sugar and place it in the prepared cookie sheet. Repeat with the rest of the dough.
Bake for 10 to 12 minutes.
Gently transfer to the cooling rack to cool completely.
Store the leftovers in an airtight container in the refrigerator.
