Pork Tacos with Fresh Pineapple Salsa and Sriracha Sauce
These pork tacos can be made on the stove or in the Instant Pot for an easy weeknight meal that is worthy of serving to guests.

Ingredients
For Pork Tacos
1 tablespoon olive oil or avocado oil
1/2 red oniondiced
1clove garlicdiced
1jalapenodiced and seeds removed
24ozpork tenderloinsliced in strips
1 cupchicken brothonly if making in the Instant Pot
tortillas
For The Pineapple Salsa
1cupfresh pineapplechopped
1cupcucumberchopped
1/2cupcilantrochopped
1/2 cupred onionchopped
1/2limeto squeeze out the juice
dashsalt
For the Sriracha Sauce
1cupplain greek yogurt
1/4cup sriracha sauceadjust to taste
Instructions
First prep the pineapple salsa: Simply toss together all of the ingredients in a bowl and squeeze the lime juice over the top. Mix together and store in the fridge until ready to eat.
Then make the sriracha sauce: Mix together greek yogurt and sriracha and store in the fridge until ready to eat.
For Pork Tacos on the STOVE TOP: Follow these directions to make the pork tacos on the stove top. For Instant Pot pork tacos directions, see below. Heat 1 tablespoon olive oil in a large saute pan over medium heat. Saute onion, garlic, and jalapeno until fragrant (1-2 minutes). Increase heat to high and add pork tenderloin slices. Brown all sides and cook until no longer pink. Serve over warmed tortillas and top with pineapple salsa and sriracha sauce.
For Pork Tacos in the INSTANT POT: To make Instant Pot pork tacos, turn your Instant Pot on to "Saute". Add 1 tablespoon of olive oil or avocado oil and allow to heat up. Add onion, garlic and jalapeno and saute for one minute. Add 1 cup of chicken broth and sliced pork tenderloin. Close lid and set to "Manual" pressure 10 minutes. Allow pressure to naturally release and then serve pork over warmed tortillas and top with pineapple salsa and sriracha sauce.
