Ingredients
4# Beef Chuck Roastobvious fat removed
1/2CupCoconut Milk
1/2CupWater
1/2TbspRed Curry Paste
Juice of 1 Lime
2tspCumin
1/2tspRed Pepper Flakes
1medium yellow oniondiced
1Yellow bell peppercut in strips
1Red bell peppercut in strips
1Orange bell peppercut in strips
4clovesgarlicminced
1/2Tbspground ginger
1Box Success Basmati Rice
Salt and Pepper to taste
Instructions
In the slow cooker combine coconut milk, water, curry paste, lime juice, cumin, red pepper flakes, onion, peppers, garlic, & ginger and mix well. Then add beef and cover.
Cook on low 6-8 hours until beef is tender and falling apart.
Remove beef and shred then add back into the slow cooker.
