Ingredients
1cuporange juice100% juice, no sugar added
1/3cuphoney
4tablespoonscoconut aminos or soy sauce if you prefer
4teaspoonscornstarchor tapioca starch or arrowroot powder
1/4teaspoonground ginger
3-4boneless, skinless chicken breastssliced into strips
2/3cupcashewsunsalted
1cupcarrotsdiced or matchsticks
1cupbroccolicut small
1can baby corn
olive oil for stir fryingor avocado oil
Instructions
Begin by combining orange juice, honey, coconut aminos, cornstarch/tapioca powder and ginger in a small bowl and whisking together. Set aside.
Then heat some oil in a large skillet over medium-high heat. Add carrots, broccoli and baby corn and saute until bright in color but still crisp (1-2 minutes). Remove vegetables to a separate plate and set aside.
Add a little more oil to the skillet and allow it to warm up. Then add chicken to pan and saute until cooked medium-high. Add cashews and saute for 1 minute.
Add the veggies and sauce to the skillet and bring to a boil to thicken the sauce. Serve over brown rice.
