These rainbow Jello cookies use a sugar cookie recipe and Jello to flavor and color them. Kids will love making these and they taste great too!

Ingredients
3 1/2cupsflour
1tspbaking powder
1 1/2cups(3 sticks) buttersoftened (not melted!)
1cupsugar
1egg
1tspvanilla
63oz boxesJelloCherry, Orange, Lemon, Lime, Wild Berry, and Grape
Instructions
Preheat your oven to 350F and prepare a cookie sheet with a baking mat or parchment paper.
Beat butter with a paddle attachment until creamy. Add sugar, egg, and vanilla and beat until combined. Gradually add in flour and baking powder until blended.
Divide dough into 6 sections. Sprinkle 2 tablespoons of Jell-o onto each section. Knead together with dough. If you don't like the color you achieve with the Jello, then add food coloring until you like the color.
Shape dough into 1-inch balls and roll the dough balls in the remaining jello from the packets. Place on a baking sheet lined with a silicone mat and flatten with the bottom of a cup.Bake 8 to 10 minutes. Cool for 2 minutes on the baking sheets, then transfer to wire rack and cool completely.
