Old fashioned potato salad recipe just like Grandma used to make! Delicious summer comfort food that is perfect for a picnic or potluck!

Ingredients
5lbbag of Potatoes
4-5Stalks of Celery
1Large Sweet Onion
5-6Large Hard Boiled Eggs
1-2cupsMayonnaise
½-1cupSweet Relish
Salt
Old Bay Garlic & Herb
Parsley Flakes
Instructions
Wash potatoes and place in large pot. Gently boil potatoes whole with the skin on.
Boil potatoes for 15 to 25 minutes or until they are tender when pierced with a fork.
Strain potatoes and allow them to cool. Once cool enough to touch, peel off the skin. You may leave the skin on if you prefer. Allow potatoes to cool entirely. You can speed up the process by placing them in the fridge.
Wash celery stalks and cut into thin slices.
Dice sweet onion into small pieces.
Chop hard boiled eggs into one inch pieces.
Once potatoes are cool, dice them into 1 inch pieces and add them to a large mixing bowl.
Add mayonnaise, relish and spices. You may add more or less depending on your own individual tastes. Gently stir into the potatoes. Don’t stir too much or you’ll break apart the potatoes.
Add sliced celery, diced sweet onion and chopped egg. Stir into potato salad.
Allow potato salad to rest in fridge for at least one hour before serving.
