Easy homemade granola bars using healthy ingredients. Use this base recipe to make many different flavors. Soft and chewy granola bars that are perfect for on the go snacking!

Ingredients
2cupsold fashioned oats
1cuprice cereal
1/4cupunsweetenedshredded coconut
3Tbsp+ 1 tsp coconut oil
1/4cupagave or honey
1/2cupbrown sugar
1/2tspsalt
1/2tspvanilla
Mix-In Ingredients (Pick ONE variety)
M&M: Mix in 1/2 cup mini M&M candies
White chocolate cranberry: Mix in 1/3 cup white chocolate chips & 1/3 cup craisins
Peanut butter pretzel: Mix in 2T peanut butter1/3 cup mini chocolate chips, 1/3 cup crushed pretzels
Peanut butter raisin nut: Mix in 2T peanut butter1/3 cup nuts, 1/3 cup raisins
Chocolate chip: Mix in 1/2 cup mini chocolate chips
White chip: Mix in 1/2 cup mini white chocolate chips
Coconut raisin: Mix in 1/3 cup almonds1/3 cup raisins and 1/4 cup coconut
Maple Pecan: Mix in 1/2 cup pecans2T maple syrup
Instructions
Mix together oats, rice cereal and coconut in a medium bowl and set aside.
In a small saucepan add coconut oil and heat over medium-high heat. Once melted add agave, brown sugar and salt. Stir to mix together and then let sit until it reaches a boil. Once bubbles cover the surface of the mixture set timer to 1 minute 30 seconds and stir continuously. (*if using honey reduce time to 1 minute of gentle boiling) You may need to turn your heat down to low-medium. Maintain the boil but don't let it burn. Once timer sounds remove from heat and add vanilla and stir.
Pour boiled mixture over oat mixture and mix together to coat oat mixture. Let sit for a minute or two to cool.
Then add in your mix-in ingredients and stir together.
Pour into a 9x13 pan (does not need to be greased). Place a sheet of parchment paper or plastic wrap over the top and press down firmly to pack the granola bars tightly into the pan. This helps them hold together better.
Place in fridge for 30-60 minutes. Remove and cut into rectangles. I then transfer each one into a snack size plastic baggie for easy grab and go snacks. Store in fridge. Lasts 1-2 weeks in fridge.
