Ingredients
2tablespoonsolive oil
1lbbonelessskinless chicken breasts
3tablespoonshomemade taco seasoning or 1 envelope fajita seasoning
2cupsdiced onionapprox 1 whole onion
2-3bell peppersdiced
3-4clovesgarlicminced
2cupslow-sodium chicken broth
1/2cupheavy cream
1 10ozcan diced tomatoes with green chilies
8ozNo Yolks Broad noodles
1/2teaspoonsaltto taste
Instructions
Begin by cutting one pound of boneless, skinless chicken breasts into bite-size pieces. Make homemade taco seasoning (recipe in post) or use an envelope of taco seasoning to season the chicken. Use only HALF the seasoning at this time. Head one tablespoon of olive oil in a large skillet over high heat and when the oil is very hot, add the chicken in a single layer. Do not stir until that side has browned (about 1-2 minutes). Then flip the chicken and brown the opposite side. Now, remove the chicken to a plate and set aside for later.
Add the remaining tablespoon of olive oil to the hot skillet (heat should still be on high) and allow oil to heat up. Add onions, bell peppers, and remaining taco seasoning to the skillet. Stir occasionally until the veggies are seared. Turn heat down to low and add minced garlic to the veggies and stir. Remove veggies to the plate with the chicken and set aside.
In your same skillet, add chicken broth, cream, diced tomatoes, uncooked No Yolks broad noodles, and salt. Stir to combine and bring to a boil. Then, cover and reduce heat to medium-low and cook for 15 minutes or until noodles are tender and liquid is absorbed. Then, add the chicken and veggies back into the skillet and stir to combine. Serve immediately, preferably with warm breadsticks! YUM!
