Ingredients
1poundground chickenraw, do not pre-cook
1white sweet potatopeeled and diced
2carrotspeeled and diced
2stalks of celerydiced
1yellow oniondiced
2garlic clovesminced
1teaspoonchili powder
1teaspoonsmoked paprika
1teaspooncumin
1teaspoonsalt
1 15ozcan tomato sauce
1 15ozcan diced tomatoesdo not drain
½cuphot sauceI used Frank's Red Hot Sauce
1 15ozcan chicken broth
Instructions
Combine all ingredients in a slow cooker and stir. Cover and cook on low for 6-8 hours.
Serve hot and optionally you may garnish with plain greek yogurt, a squeeze of lime juice, avocado, and/or green onions.
