Ingredients
2TbspOlive Oil
3-4lbbonelessskinless chicken breasts
1tsppaprika
3tspDry Italian seasoning
5Medium Tomatoesdiced
1CSpinachraw
4Garlic Clovesminced
1TbspCrushed Red Pepper
1# Baconcooked and chopped
1Pinthalf and half
1 1/2Cshredded Parmesan Cheese
1/2CupParmesan cheesegrated or shredded (for serving)
Instructions
In a large skillet heat 2 Tbsp olive oil over high heat.
Add chicken breasts (I cut them in half) and cook on one side for 1 minute to sear it. Season the top with paprika and Italian seasoning. Flip over and season and sear the opposite side.
Reduce heat to medium and cover. Cook until center is no longer pink, flipping occasionally to prevent burning.
Once completely cooked remove from pan and put on a cutting board to slice.
To the same skillet (do not add chicken back in yet) add chopped tomatoes, spinach, garlic, crushed red pepper, bacon and mix together.
Add half and half and bring to a boil. Once the half and half is boiling add in 1 1/2 C shredded Parmesan cheese and stir until cheese melts and sauce becomes creamy (about 2 minutes).
Return the chicken to the pan and mix well.
Serve over bow tie pasta and top with shredded Parmesan cheese.
