Summer is winding down and I’m looking for every excuse in the book to make it last a little bit longer! I don’t want it to end! This Tropical Ice Cream Sandwich is the perfect way to get all those Summer favorites into one delectable dessert! It combines grilling with ice cream and what could be better than that?!

We gathered around on our deck and grilled supper followed by grilling pineapple slices for our dessert. I love sitting out on our deck as a family and enjoying dinner. Adding in this special treat just made it that much more enjoyable. Start out by grilling 2 pineapple slices over low to medium heat for 90 seconds on each side. Allow to cool briefly so they don’t melt your ice cream! Ours were still a little too hot and our ice cream melted very quickly.

Next coat the outside of the ice cream sandwich in 2 Tbsp of toasted coconut. Then enjoy it because it’s amazing!

Ingredients
  • 2 (1/4-inch thick) fresh pineapple slices
  • 1 cup Breyers® Natural Vanilla Ice Cream
  • 2 Tbsp. toasted flaked coconut
Instructions
  1. Grill pineapple slices over low to medium heat for 90 seconds on each side. Allow to cool briefly.
  2. Sandwich the softened Breyers® Natural Vanilla Ice Cream between the 2 grilled slices of pineapple.
  3. Coat sides in toasted coconut.
  4. Slice in half and serve.

  5. I will have to try your delicious recipe. I like that Breyers ice cream does not have Growth hormones. We do not need this in our ice cream. The dessert idea looks refreshing.

  6. I am a big fan of anything coconut and pineapple. Especially love the two together. Never thought of this but what a wonderful idea. This would be almost like drinking a pina colada and that sounds delicious.
