How To Make Cashew Chicken Stir Fry

This cashew chicken stir fry recipe is easy and done in 30 minutes! It makes a great weeknight meal and leftovers heat up well also! To make cashew chicken stir fry you’ll need some common ingredients and this recipe does not use any crazy ingredients that will have you scouring the supermarket to locate.

 

Cashew Chicken Stir Fry Ingredients

  • 1 cup orange juice (100% juice, no sugar added)
  • 1/3 cup honey
  • 4 tablespoons coconut aminos (or soy sauce if you prefer)
  • 4 teaspoons cornstarch (or tapioca starch or arrowroot powder)
  • 1/4 teaspoon ground ginger
  • 3-4 boneless, skinless chicken breasts, sliced into thin strips
  • 2/3 cup cashews, unsalted
  • 1 cup carrots, diced or matchsticks
  • 1 cup broccoli, cut small
  • 1 can baby corn
  • olive oil for stir frying (or avocado oil)

Cashew Chicken Stir Fry Directions

Begin by combining orange juice, honey, coconut aminos, cornstarch/tapioca powder and ginger in a small bowl and whisking together. Set aside. Then heat some oil in a large skillet over medium-high heat. Add carrots, broccoli and baby corn and saute until bright in color but still crisp (1-2 minutes). Remove vegetables to a separate plate and set aside. Add a little more oil to the skillet and allow it to warm up. Then add chicken to pan and saute until cooked through. Add cashews and saute for 1 minute. Add the veggies and sauce to the skillet and bring to a boil to thicken the sauce. Serve over brown rice.

Ingredients

  • Add the veggies and sauce to the skillet and bring to a boil to thicken the sauce. Serve over brown rice.

What To Serve With Cashew Chicken Stir Fry

I recommend serving your cashew chicken stir fry over brown rice or rice noodles. We like to top it with gluten-free chow mein noodles as well! A little bit of red pepper is great if you like heat too. Depending on your dietary considerations, you can serve cashew chicken stir fry with egg rolls and sweet and sour sauce. You could also simply serve it with a side of fruit like mandarin oranges. Since the vegetables are incorporated into the meal you don’t need to serve a side of veggies. You may also want to serve fortune cookies with it as a fun treat! Try eating with chopsticks as a fun way to expose the kids to another culture’s ways of eating.

If you have leftover cashew chicken stir fry then store in an airtight container in the fridge. It makes great leftovers for lunch the next day! My kids even take it in their lunch to school because we use lava lunch pails that keeps it hot!

To reheat leftover cashew chicken stir fry place stir fry, and rice if desired, into a saute pan. Add a little bit of water and cover with a lid. Heat over medium heat until contents are heated through and warm. Eat immediately.
