Frankenstein Sneaky Veggie Smoothie Recipe

Getting your kids to eat their veggies can be tricky! As a mom of 4 kids I know just how difficult it can be to convince a kid to eat their veggies. I’ve chosen to work veggies into our meals in other ways and get creative rather than always having a battle at the dinner table. Since Halloween is just around the corner I knew this was the perfect time to take a food my kids already love, smoothies, and turn it into a spooky treat with some veggies snuck into the recipe! I made these Frankenstein Sneaky Veggie Smoothies today and they were a huge hit! The kids thought they were getting a treat and I knew they were actually getting a full serving of vegetables and fruit for the day! Score one for Mom!

Sneaky Veggie Smoothie

To make this smoothie you will need some frozen fruit, a cup of yogurt, 3/4 cup of apple juice (I used a reduced sugar variety) and 1 Cup frozen Birds Eye Broccoli Florets.

Mix it all together in the blender. I used my Ninja which I love. It’s great for smoothies because it actually purees everything with ease.

 Top with a strawberry and serve!

Toddler Veggie Smoothie

My kids gobbled these up and asked for seconds! I was thrilled that they liked them and I have to admit, they taste just like fruit so they don’t know the broccoli is hiding in there! Since it’s Frankenstein it’s supposed to be green! Use a permanent marker or a dry erase marker on glass to draw your Frankenstein faces or let the kids draw them!

I’m always looking for ways to encourage my kids to eat their veggies. Melissa d’Arabian has paired up with Birds Eye to help give moms tips to incorporate veggies into their kids diets. I love her tip in the video above. It’s a recipe I know my kids already love so sneaking those veggies in there wouldn’t be out of the question. Including them in the cooking process is a tip I use regularly and it really works! My kids are far more likely to eat their veggies if they’ve helped me grow them in the garden or prepare the meal. They are proud of their hard work and want to eat the rewards! Even letting them pick out which bag of Birds Eye veggies will be a part of dinner is a great start to including them in the process.

Sneaky veggie smoothie with one serving of vegetables, yet tastes like fruit!

Ingredients
  

  • 1 Cup mixed frozen fruit I used strawberries, pineapple and banana
  • 1 Cup Birds Eye frozen Broccoli Florets
  • 1 Cup Strawberry Banana Yogurt
  • 3/4 Cup Reduced Sugar Apple Juice I used Mott's for Tots

Instructions
 

  • Combine all ingredients in blender and blend until smooth.
  • Top with a strawberry and serve in Frankenstein decorated cups. To decorate cups either use a permanent marker to draw Frankenstein faces on them or use a dry erase marker on glass cups and let the kids draw them!

  5. Smoothies are such a good way to get the vegetables in- I llike getting in greens and carrots this way and they are so good.
