My husband and I LOVE corn. We don’t just like it or enjoy it, we love it! It’s our favorite thing to get every year at the state fair. We get it drenched in butter and add salt to it and it is SO amazinzingly delicious! Once the weather starts warming up we know we will start to see corn on the cob in the grocery store!! You often think of corn as a Summer time treat but I’m so glad that it’s available year round and tastes great in the Spring too! I picked up some corn at the grocery store.
I boiled the water and added a good dash of sugar. Many people don’t know about adding sugar to the water but it helps it to taste amazing. They say not to add salt as it toughens the corn. DON’T overcook! Corn doesn’t take long to cook!
- Whole grains, like Supersweet Corn, are an essential part of a healthy diet
that have been linked to a lower risk of heart disease, diabetes, certain
cancers and other health problems. - The healthiest kinds of grains are whole grains, which corn is. Whole grains are better sources
of fiber and other important nutrients, such as selenium, potassium and
magnesium. - Fresh sweet corn is a great source of fiber, too! Fiber slows the rate that
sugar is absorbed into the bloodstream so that when you eat foods high in fiber,
such as whole grains like fresh sweet Corn, the sugar in those foods is absorbed
slower, which keeps your blood glucose levels from rising too fast. This is good
for you because spikes in glucose fall rapidly, which can make you feel hungry
soon after eating and lead to overeating. - Fiber makes your intestines move faster. When you eat whole grains like sweet
corn that are rich in insoluble fiber, it moves faster through your intestines,
which can help signal that you are full. Fiber also cleans your colon, acting
like a scrub brush. The scrub-brush effect of fiber helps clean out bacteria and
other buildup in your intestines, and reduces your risk for colon cancer. - Recent studies have shown, too, that sweet corn, it turns out, is one of the
very best dietary sources of two antioxidants called lutein and zeaxanthin that
help promote healthy vision and protect eyes. Besides protecting against
cataracts and chronic eye disease, lutein may help prevent hardening of the
arteries that can lead to heart attack and stroke.
So here it is. My secret recipe!! This is so good that I rarely just eat my corn with butter and salt anymore and that’s saying a lot because that used to be my all time favorite!!
Cheesy Cajun Corn Recipe:
1/2 Cup Butter softened
1/2 Cup Mayo
1/2 tsp Chili Powder
1/2 tsp Cajun Seasoning
1/4 tsp Cayenne Pepper
1/4 tsp Onion Powder
Shredded Colby Jack Cheese
Mix together your softened butter and mayo. Add chili powder, canjun seasoning, cayenne pepper and onion powder. Stir until mixed. Spread on hot corn and top with shredded cheese. Serve immediately. Enjoy!
